Top This: How to Make Shaved Asparagus Pizza

Top This

Learn how to work a new topping onto your pies.

Today on Slice, the debut of a new column ... Top This, in which we focus on a pizza topping you might not have thought of or have wondered how to work onto your pies. The first installment, shaved asparagus, as found on the Bird's Nest pizza at Jim Lahey's pizzeria, Co.

What You'll Need (for 2 to 4 small pizzas)

For shaved asparagus alone: • A vegetable peeler (a Y-peeler works best) • 1 to 2 bunches medium asparagus (about 1 pound each)

For a Bird's Nest pizza: The above plus • 2 to 4 dough portions (try Lahey's dough from his book My Bread) • Parmesan • Tomme de savoie cheese • Quail eggs (4 per pizza. Chicken eggs work as well; just use 2 per) • Black truffles • Extra-virgin olive oil

For step-by-step visuals, peep the gallery above, but the takeaway here is using shaved asparagus on a pizza.

Other Uses

Lahey also serves a shaved asparagus salad with avocado, sea salt, a squeeze of lime juice, and mint. It's a great combination. Both asparagus and avocados are totally in season right now. What are you waiting for?
