You can order whole pies at Brooklyn Pizza in Birmingham, Michigan, but everyone seems to be here for a quick thin-crusted slice, a pitstop near the Anthropologie or on the way to the movie theater. Slices are reheated in a wood-burning Renato oven—when we asked about it, the cashier said it was about time to put another log on the fire.
It might have helped if he'd done it before attempting to warm up our slices; they weren't quite piping hot, and could have crisped up a little more. But despite a little floppiness, the slice was pretty darn good. The plain slice had a thin layer of garlicky tomato sauce (perhaps a little heavy on the dried oregano.) The cheese was nothing fancy, but it was flavorful and properly melted.
This almost delicate slice won't fill you up as much as a square of thick Detroit-style pie, but maybe that's a good thing if you can't fit an afternoon nap in your schedule.
