Scottsdale, Arizona: 'Pomo Pizzeria Napoletana

'Pomo Pizzeria Napoletana is situated in the Borgata, a faux-Italian plaza built about 20 years ago in the heart of Scottsdale, Arizona. Stefano Fabbri opened the restaurant—the valley's first VPN-certified pizzeria—in February of this year with his Acunto Forni brick oven as the prominent centerpiece. This 6,000-pound beauty was hand-built in Naples, shipped across the ocean, and then brought all the way to Arizona.


Our waiter greeted us warmly. He was attentive without being overbearing, and genuinely friendly. So we were off to a good start. The first pizza we ordered was the Santa Lucia, topped with San Marzano DOP tomatoes, fior di latte, broccoli rabe, and Italian sausage ($13.95).


It arrived soon after we placed the order, and I immediately noticed that the crust was wonderfully delicate and light with a very thin, crisp exterior. I ate my first piece with a fork and knife, but with subsequent slices I used a two-handed approach.

While the broccoli rabe was nicely cooked and just tender, I felt that its bitterness overpowered the rest of the pie a bit. The sausage was succulent and plenty moist, but it lacked the flavor power to stand up against the rabe.


Our second pizza was the Donna Rosa, topped with fior di latte cheese, homemade pesto, shrimp, and cherry tomatoes ($14.95). Like the Santa Lucia, the crust served as a delicate backdrop to the toppings. The shrimp were large and had a nice blackened flavor, while the cherry tomatoes were bright and added a fine balancing acidity.

The pesto though was subtle—almost imperceptible. My lunch partner thought the balance was perfect and enjoyed every morsel. And although I was longing for a bit more of the pesto to shine through, I still consider the Donna Rosa quite a satisfying choice.

The overall experience was very pleasant. The Italian music piped through the sound system on the patio completed the mood: 'Pomo is a great place to spend a leisurely Sunday afternoon. I'll be back soon to try the Quattro Stagioni and the Capricciosa pies.
