Bill's Cast Iron Pizza
"From the cast iron pan series: shroomage, cherry tomatoes, mozz, sauce, parm."
Ooh, can I have a slice of that?—MH
Robert D.'s Spicy Sausage and Sweet Texas Onion Pizza
"Here is my pie that I made Friday night for the Rangers/Yankees game. Go
"The dough is a thin crust style. My sauce was straight out of the can Cento
Plum Tomatoes—not cooked, nothing added. The pizza is topped with a wonderful spicy Italian sausage which I previously grilled on the outside cooker. The sausage is from the local Jimmy's Food Store in East Dallas. The cheese is
fresh mozzarella. I also added fresh garlic and sweet Texas onions. Before saucing I brushed some extra virgin olive oil on the pie dough. Finished off the cooked pie with a little fresh oregano from my backyard herb farm."
"My cooking method was to place the pizza stone in a 500-degree gas oven and
let it get full pre-heated. I first cooked the thin crust pie on a metal pizza pan before transferring it to the pizza stone to finish off. Mamma mia, I was one happy fella; eating my homemade pie and rooting my
Rangers to victory of them Bronx Bums."
Glen P.'s Jalapeno, Sausage, and Feta Pie
"I made this pie at my friend Kate's house. She's got a wood fired oven in her kitchen, that I think is the nuts. We made 12 pies that night and this was one of my first. It had jalapenos, sausage, mozz, and feta."
"Check out the ash on the side of the pie—I was still figuring out how to deal with the coals and and get the rotation down, since the oven itself wasn't that deep. I must admit that no pie I've ever made in a conventional oven compares. I'm sold on WFO's, now I just need to figure out how to get one in my kitchen!"

Kate's Wood-Fired Oven
This is where Glen P. made his pies. Wow, what a great setup!
Adam Kuban's Pineapple-Pepperoni Spicy Pizza
"I tried this one again. I don't care who hates pineapple on a pizza. I like it. But I like it with pepperoni or hot sopressata instead of the more traditional ham. Here, it's just Boar's Head pepperoni, fresh pineapple sliced very thin on a mandoline (beneath the cheese), specks of peperoncini, and a drizzle of hot, chile-infused oil. Cheese here is simply shredded regular (low-moisture) mozzarella. Once again, Girl Slice (a pineapple lover herself) did not like this one. But, whatever, I made this one JUST FOR ME. Dough is dmcavanagh's recipe (minus the additional yeast); cooking method is the skillet-broiler method."
Happy Halloween from James S!
My Pie Monday regular James S. sent along this Halloween snapshot:"What else would the kids dress up as? (Notice the "brick oven" that my daughter, the slice, is in.)"
Hope everyone had a great Halloween weekend!
