To Fold Or Not To Fold

FoldHoldHalf-thumb.jpgThat is the question. But do you want the answer? You do? Be careful what you ask for. I just found this discussion on a website called FootballGuys.com. Seems the Football Guys are arguing the merits of folding a slice or not folding it. Discussion has gotten pretty heated. Witness:

OutlawsGM, who I think might be from Florida, says: "Folding a pizza has got to a northern thing. I had never seen anyone fold a slice if pizza until I went to the worst place in the world New York. Everyone was folding their pizza and I looked like an alien when I ate my pizza unfolded."

Not standing for that shit, Stompin' Tom Connors replies: "I got news for you -- it wasn't the unfolded pizza that made you look like an alien to New Yorkers. No, it was you and your pasty white Okie self stuffed into Bermuda shorts and suburbanite mall T-shirt, gawking slackjawed up at buildings over *gasp* five stories high, asking a local in a snail's pace moronic drawl where the Empire State Building is, tourist pins littering your Christopher Robbins hat, shuffling around the Today Show window so you can give grandma a thrill when she watched from the home."

Read the bulletin board discussion if you dare, gentle readers.

Personally, I don't like to fold. I'll tell you one thing -- I grew up in Brooklyn, and I NEVER saw anyone eat 2 slices folded the way John Travolta did in SNF until after the movie came out.

Depresh: I think it depends on the slice. I'm not a big fan of folding the slice in half completely. I don't like the mouthfeel of pure crust. I like to feel crispy crust on the bottom teeth and toothy cheese on the top. I do an in-between fold, more like an arc that lends support to the tip. Otherwise you have to prop the tip up with your other hand. Or you have to eat it the way Riff Randell describes Joey Ramone eating it in Rock 'n' Roll High School: " ... he holds the pizza dripping above his mouth. He just slithers and slides it into his mouth, and it's so sexy the way it's [makes slurping noise; laughs]."

The beauty of individuality is each person can express him or herself in his own unique way. Down with folding dogma! Appreciate the folding diversity we have in this world!

I think chacun a son gout. Oth a little pomo-type deconstruction on the history of folding would, I think, reveal that folding is necessitated generally by poorly constructed pizza. That is, if the toppings are too heavy and the crust is insufficiently crisp the only way to eat a limp piece of pizza and avoid the toppings sliding off is to fold it.

I am from Bensonhurst and we have always folded our pizza! Always. I've been eating pizza since I am 5. I am many more years older than that now and I still fold my pizza. My husband folds his and my son his. We live in NJ now and I've seen other NJites eat it that way. I guess it is a NY/NJ/CT thing because my friends in CT also do that. Then again, it isn't a really northern thing because I lived in Boston for 4 years and none of my New England pals ate it that way. They thought I was nuts.

So, I guess it is just a NY/NJ/CT thing. I will continue to do it to my dying day.

from Pizza marketing quarterly:

"Like local New Yorkers who fold their slices in half and eat while walking, these Spanish soldiers folded the flat bread into a libretto (little book) and ate it with their hands. One of the main characteristics of New York style pizza is its thin, chewy crust, but that isn't everything that defines New York style pizza."

so there's an answer and BTW...

"...until I went to the worst place in the world New York."

you are an ass.

Bklyngirl, my father always folded his slice. I agree that that traditional Bklyn style is folded. But, tell me, did you see many people in Bensonhurst eating 2 slices at a time like John Travolta? Just curious.

I have been a Brooklynite (bensonhurst) all of my life and since the first day I ate a slice or pizza, I have folded it. Its so interesting that everyone who is not a NYer has a negative opinion towards NYers and the fact that only they actually know what a slice of pizza is suppose to look like, taste like and how to correctly eat it. To all NY haters, go to Chicago!

Trenton NJ pizza has to be folded or the delicious oil/sauce would drip all over your nice clean clothes. I'm not worried about stains, but about missing one delicious drop! God, I miss that pizza.

Being a Joisey Boy, and having woiked for Crazy Eddie Antar in the day, I've opened many a Noo Yawk store with only pizza and Coke-a-Cola. Well, pizza and Papaya King, but I digress...

Fold, baby, fold.
Keeps the molten cheese from sliding off.
Eats faster so you can get more in your pie-hole.
Yum!

A regular slice = fold. Definitely.
A thick square slice, not so much.
Heathen that I am, I've been known to fold half a cold neapolitan marinara with pickled jalapenos as a pizza-sandwich.
