Read all Slice of Heaven excerpts on SliceGiuseppe Pappalardo, an owner of Joe & Pat's in Castleton Corners, Staten Island, mastered his craft at three legendary Staten Island slice establishments: Nunzio's, Ciro's, and Tokie's. His slices are distinguished by a superbly thin, crisp crust.

"They're easier to digest," he says, "so you can eat a lot of them."

And believe me, I do.

Giuseppe's son Angelo has now joined him at the pizzeria. He's a serious chef whose last stop was at Esca in Manhattan. I'm sure he'll do wonders for all the other food at Joe & Pat's. The only way he could improve the pizza is to make it with fresh mozzarella.

OK here goes, I will thrown off thye Ilsand if and when they read this. J&P's pizza could be ok if they used the grated type of mozzerella instead of those so-called cubes of cheese. Do go on Friday night or Sunday after church, they speed up the ovens so that the cheese and sauce just lay in the center of the pie. The crust is like a matzo!!!! brittle and tasteless. They do have their fans but it's hard to understand why, when you have Brothers and Denino's 5 minutes away.

Let me say something about Joe an Pats. I moved to Bay Ridge and I yearn for Joe and Pats to replace establishments like Gino's, Bay Ridge Pizza. Joe and Pat's heros are high and above anything you can get here in the ridge. I had some kind of chicken at Gino's that was stuffed, the sauce tasted like it had soy sauce in it. Joe and Pat's makes the best Grilled chicken and sauteed escarole. They have so much more on the menu. I only wish they would consider branching out to Brooklyn. They are pros in the business, and their thin pies can definitely compete with these garlic laden grandma slices everyone swears by.
