Here is my latest pie. For a few weeks I was thinking of doing a square pie using a focaccia recipe and was spurred on by Aaron's post.
I made it in the style of L&B Spumoni Gardens with the cheese below the sauce. It's a focaccia dough with fresh mozzarella put on first, topped by a lightly cooked sauce of drained San Marzano tomatoes, garlic, and crushed red pepper, and finally topped by grated pecorino Romano.
Nice, nice pie, ESNY1077. Can I just say that as I'm sitting here hitting "Publish" on this post this morning, my stomach is growling because of this pizza. Thanks!
