Daily Slice gives a quick snapshot each weekday of a different slice or pie that the folks at the Serious Eats empire have enjoyed lately.

Ciro's Pizzeria in downtown San Diego offers a variety of thin-crust New York-style pizzas, but my eye was immediately drawn to the Sicilian pie. The rectangular slab was topped sparingly with a sweet tomato sauce and chewy mozzarella cheese.

The light hand with the toppings is a good choice, though, because the soft crust is the main appeal of this slice. It's blessed with an excellent hole structure, so even though it's quite thick, it felt almost weightless. A slightly crisp edge where the crust browned added to the flavor. Who needs toppings with a crust this good?
