Daily Slice: Pizzicato Pizza, San Diego
Daily Slice gives a quick snapshot each weekday of a different slice or pie that the folks at the Serious Eats empire have enjoyed lately.

Slices at Pizzicato Pizza tend toward the inventive; the mostly Oregon-based chain serves sesame-marinated shrimp pizza with spicy peanut sauce and a white pie with gorgonzola, spinach, and walnuts. I sampled a daily special topped with tomatoes, spinach, prosciutto, and goat cheese. With so many strong flavors competing for attention, this was a gutsy slice. The salty chevre and the thicker-than-average slices of sweet tomato contrasted nicely, but the prosciutto was overcooked and chewy, which was a bit of a distraction.

The cornicione had a brittle, crunchy exterior which yielded to a soft and fluffy interior, but the rest of the crust was thin and somewhat limp. The crust was cornmeal-encrusted and baked to a golden blonde, but so pliable that I was tempted to roll it up like a pizza cigar. Folding it in half was necessary to keep the toppings in place.
