In Willemstad, Curaçao, Il Forno Pizzeria's take on Margherita pizza is influenced by the colonial legacy of the Netherlands Antilles. On this Dutch Caribbean island, "cheese" is synonymous with "Gouda"—an enticing fusion that rescues this pie. The tart but indistinct tomato sauce keeps the crust moist as the gooey mozzarella and sharp Gouda mingle into a surprisingly delightful bite.


The ultrathin crust is similar to a crisp flour tortilla, but has a pleasant char on the underside from the wood-fired oven. The edge is crunchy while the middle remains soft.

With three locations on the island, this French family-owned restaurant dominates the local pizza options. At NAƒ. 20,90 (about US $11.67) it's hardly a bargain, but this is a passable pie on an island known mostly for their stewed goat and conch.
