On this Dutch Caribbean island, "cheese" is synonymous with "Gouda"—an enticing fusion that rescues this pie. The tart but indistinct tomato sauce keeps the crust moist as the gooey mozzarella and sharp Gouda mingle into a surprisingly delightful bite.
