Daily Slice gives a quick snapshot each weekday of a different slice or pie that the folks at the Serious Eats empire have enjoyed lately.

Prizzi's Piazza opened in 1989 as a humble five-table pizza joint which has since transformed itself into an intimate Italian restaurant. Located in Hollywood's trendy Franklin Village, Prizzi's weekday $8 lunch special of two made-to-order slices of one-topping pizza, a side salad, and a soda or tea is hard to resist.

While Prizzi's thin and chewy crust may not have the crispness some are hoping for, it is well flavored and has a pillowy softness that serves this pizza well. Made in-house daily, the vibrant sauce has delicate hints of basil and oregano. Prizzi's uses a closely guarded special blend of three cheeses that are especially creamy and well melting with the possible addition of a mild and buttery fontina.

At times Prizzi's can be overly generous with toppings, but I certainly didn't mind a heavy dose of this unique cheese blend. The spicy pepperoni, from nearby Jacobellis Sausage Co. in Burbank, provided welcome saltiness and and a hint of garlic and was lean enough that the pizza wasn't swimming in pools of grease. More topping options for a pork fix include ground and sliced Italian sausage along with applewood-smoked bacon and pancetta.

Prizzi's will be closing its Franklin Village location in Hollywood in May in favor of a larger space in Burbank. But when one door closes, another one always opens. Fans of the bustling Oaks Gourmet market (recently reviewed here) will be pleased to know that they're opening a new gastropub in Prizzi's place.
