Daily Slice: Akasha, Los Angeles

Daily Slice gives a quick snapshot each weekday of a different slice or pie that the folks at the Serious Eats empire have enjoyed lately.

Every night of the week, Akasha in Downtown Culver City is brimming with eager patrons delighting over sustainably sourced burgers and "best onion rings in town". No one is here for the pizza. But these flatbreads should not be overlooked. When paired with Akasha's sides and salads they make a satisfying entrée.

The braised wild mushrooms and spicy lamb sausage is always a reliable choice, but the current summer special is quickly become a favorite. The Summer Squash pizza ($12) with goat cheese, tomato sauce, red chili flakes and thyme sprigs is a savory approach to this seasonal vegetable. Applied with a light touch, these toppings don't weigh down the slender crust.

Cracker crisp along the edge and tortilla soft in the middle, the ultra thin chewy crust is dusted with a sandy sprinkling of cornmeal. The mottled spread of crushed tomatoes keeps the pizza from being too dry, but lacks in flavor. Sliced into thin medallions, the curled edges of the summer squash look dried out, but retain their bite. Finished with the gentle heat of chili flakes and aromatic thyme, it's the chunky dollops of tart goat cheese that tie the pizza altogether.
