Daily Slice gives a quick snapshot each weekday of a different slice or pie that the folks at the Serious Eats empire have enjoyed lately.
The pizza rustica ($5.50) looks like something between a quiche and a double-crusted deep-dish pie, but tastes like the most insanely indulgent cheese-bomb you've ever encountered. "People think it's going to be eggy," said the counter girl cheerfully. "But it's really, really cheesey." That comes from ricotta and mozzarella, prosciutto and salami, all bound together with a little egg in one creamy, impossibly rich filling.
It's great at room temperature, but heat it up for maximum eating pleasure (or let the Larder folks heat it up for you.) The whole inside softens into something still-set but borderline runny, deliciously molten, the prosciutto and salami bleeding their meaty oils into the filling. And the flaky crust is likewise great cold but incredible warm, beautifully browned on the edges; it's good enough that I'd encourage Bklyn Larder to go into the pie business. (As if they weren't doing enough already.)
