Daily Slice: Pitruco Trailer, Philadelphia

Daily Slice gives a quick snapshot each weekday of a different slice or pie that the folks at the Serious Eats empire have enjoyed lately.

Fairly late to the Neopolitan-inspired, wood-fired pizza game, Philadelphia now seems to have a new brick oven popping up every couple of weeks. At the recent Night Market street food extravaganza in Chinatown we had two pizza trucks going side-by-side—Nomad (no stranger to Slice, will soon open their brick and mortar place in Philly) and Pitruco, a pizza oven on wheels that just opened about a week ago.

Pitruco's brand new cherry red trailer looks terrific, fitted with an 800 degree Valoriani wood burning oven. The Neopolitan-inspired pies spend about 90 seconds in the oven, medium-sized and pretty reasonably priced at 6-9 bucks apiece. Even with a massive line of people at the Night Market they kept it moving pretty fast, finishing the pies off with fresh basil and olive oil to order.

The Margherita was good but could have used a little bit of salt, but the Salame pizza—topped with slow cooked pancetta sauce and crispy sopresetta—was awesome. I've also heard some great things about their radicchio pizza; it wasn't on the menu at the Night Market but is available from the trailer during regular hours. It's also nice that Pitruco is already up and running at full speed, open 4 days a week rotating between Love Park (15th & JFK) and University City.
