"Consistently one of my favorites to make. Parmigiano-Reggiano, red onion, fresh rosemary, pistachios. My first pizza making session in six weeks and while I'm still struggling with the top heat and cooking times on my Little Black Egg, it was fun to make pizzas again. This pie cooked in 3:15, which is too long for the amount of Caputo 00 Pizzeria flour in the formula. Hopefully my next LBE modification will knock my cook times down to two minutes or so. "Homemade sourdough, made with KA AP and KA Bread flour and a bit of semolina. 24 hour bulk rise in fridge, rounded and risen on counter for 1 1/2 hours. Topped with fresh mozzarella, muenster, and peppered ricotta salata. Post bake, topped with pistachio, mint, oregano, garlic and blood orange pesto. Dressed with baby arugula tossed in a blood orange vinaigrette and edible flowers. Awesome combo. I'm hoping to grow some orange mint this spring and play around with that on pizza! More at my flickr account." dhorst

"This is a white pie on a Neapolitan dough cooked in the WFO. The base was fresh ricotta, Parmesan Reggiano, and some aged mozz topped with raw asparagus and paper-thin slices of Meyer lemon, a little more mozz, drizzled with EVOO and salt. That was my favorite pie of the night, marred only by the bad decision to take my perfectly done pizza and briefly dome it on the way out which put brown on the mozz... Dang it. We were afraid the lemon slices would be too much, but they were wonderful. RobynB

"This is a veggie pizza with a base of tomato sauce and mozzarella and topped with red peppers, onions, mushrooms, zucchini, and cashews. Several local (Redlands, CA) pizza places put cashews on their pizzas, but I'd never seen that before moving here. Has anyone else seen cashews on pizza? They're my favorite nut and I think they go quite well on pizza. This pizza was cooked on a pan in my Weber grill using the KettlePizza insert. The temperature was about 650 F." redwgn67

"I used Steve’s (Ev) formulation for a Lehmann dough since I couldn’t make the preferment for my market pizzas (I went on a pizza tour the day I was supposed to make the preferment). This pizza had Alfredo sauce, two kinds of mozzarella, spinach, Romano cheese, and oven roasted applewood smoked bacon as the dressings. Video of Steve (Ev) cutting the pizza. Toppings: Plain cheese/ Dough specifics: Caputo flour 00; Sea salt 2.8%; H20 60%; Yeast ADY .2%. Dough fermentation: 24 hours. Sauce:  Tuttorosso—crushed tomatoes, sea salt, fresh basil and EVOO. "Without starting a controversy (it might) I am submitting my first stab at a Chicago deep dish pie. The dough was a combination of masa/flour (very Ginos East esq) and it was a sausage and sopressata pie. It was amazing!
