Poll: Do Asian Flavors Belong on Pizza?
This poll was prompted by the Jim Lahey video that posted last week. In it, he tops his no knead pizza dough with broccoli rabe (ok), garlic (check), Thai chilis (sure, for heat), and ginger (whaaat?! Double take!). Now wait just a doggone second. If Jim Lahey can put ginger on pizza, maybe I need to recalibrate my pizza snobbery.
Asian pizzas usually get a bad rap. That can mean the whacked out pies that come from chains abroad, or the whacked out pan-Asian pizzas that crop up here. (Confession: I used to be very partial to the Thai Chicken pizza from California Pizza Kitchen.) Just to be clear, we're not talking about the shrimp and hot dog crusts, mayonnaise, and bologna sausage topped pies this time around. But would you go for a pizza where cilantro took the place of basil, or peanut satay replaces tomato sauce? Do you think lemongrass, ginger, chile garlic paste, miso, etc, have a place on pies?
