A base of super thin mandolin-sliced Yukon golds adhere perfectly to the pizza. The starch helps keep all the ingredients bound to the crust, ensuring that nothing slides off, except for the occasional chunk of glistening, smoky, slab bacon (ahem, Nueskes). Ricotta fills the creases between the potato and pork. And a perfectly cooked egg hits that balance between slightly runny and gelled.

Almost a cross between quiche and grilled cheese, the South Philly breakfast pizza is really just scrambled eggs and oozing American cheese on a sauceless pan pizza crust. It's rather beautiful in its simplicity.

Mioposto's spicy bacon and egg pizza tweaks the recipe just a bit by swapping out the tomato sauce with a puree of Tutto Calabria chilies, and damn, those chilies are spicy. What a wake up call. The runny yolks of two over-easy eggs cracked over the center of the pie cut the heat just a smidge and paired well with the salty, crispy pancetta. A thin layer of mozzarella, Parmesan, and seasoned breadcrumbs finish the pie and meld everything together with a mild nuttiness.

As a nonpizza dish, Eggs in Purgatory (similar to a shakshuka) is a mighty delicious thing, the eggs baked in a spicy tomato sauce. It's easy to see how that might translate to a pizza. Two eggs join a spicy red sauce, caramelized onions, Parmesan, and basil atop a thin crust. Runny eggs and tomatoes are a great combination, and on a pretty tasty crust, even more so.
