"This was another pie from last week's Lahey No Knead batch incorporating touches from other Slicers. Used the Tutto Calabria hot peppers in my crushed San Marzano sauce. Topped the pie with fresh mozzarella and homemade chicken fennel sausage, then spiked it with Mike's Hot Honey (which I just received). We called it the Hot N Hot Cackle." Imwalkin

"This is a roasted grape and taleggio pizza based on the one from La Madia in Chicago. The grapes were tossed with olive oil and thyme, then roasted for 2 hours at 250 F. The crust was brushed with a little olive oil and topped with mozzarella and the grapes. When the pizza was almost done, small cubes of taleggio cheese were added and it was cooked for another minute." redwgn67

"A half sheet of Sicilian delight, a slightly enriched dough made from Adirondack unbleached all purpose flour which was given an overnight cold ferment and a lengthy 5 hour pan rise. Deli sliced Stella mozzarella was topped with a healthy topping of Classico ground tomatoes, lightly seasoned with garlic and oregano and a finishing dusting of Parm. Cooked in a non-stick Chicago Metallics pan for 18 minutes at 475 degrees. A very thick dough which remained light and airy. I shoulda topped it with Cheez-It crumbs. Next time." dmcavanagh

"Keeping the kids happy with a half plain pie. 1/4 Kalamata olives and 1/4 marinated artichoke for the old folks. Caputo 00 flour, Roma tomatoes (home grown 2011 season) and seasoned with home grown basil, EVOO, sea salt and sprinkled with Pecorino Romano. 550 degrees for 10 minutes." npinto

"What is this forum if not a place to show off our failures as well as our successes; and boy have I had some failures! Never one to leave well enough alone, I've decided to "play" with my dough formula. It was perfect (to me) before, but what can I say, I was bored. So, this is the new dough: KABF, 65% hydration, 10% starter (100% hydration), 2% salt. This was baked after a 3-day rest in the fridge at about 700 for 2:45. Toppings were caramelized onions, bacon, and fontina. Toppings were tasty, but a bit dry. Biggest problem was that it wasn't browning fast enough. So, by the time it looked "right" it had gone about 30 sec. too long. Still need to play with hydration." atmast

"I didn't get home until 10:30 p.m. and wanted something quick. I had naan on hand, and my mind had been buzzing with blue cheese, bourbon pecan pesto and fried green tomatoes, while at work earlier. The naan was topped with a touch of creme fraiche, muenster, mozzarella, gorgonzola, Moody Blue smoked blue cheese and capers. Post-oven the fried green tomatoes, bourbon pecan pesto and pickled Thai chile were added. The capers and pickled Thai chile were key in balancing out the richness of this pie. Off to bed to sleep off this pizza induced food coma!" dhorst
