"My friend Brendon and I have a weekly Sunday night tradition of cooking together, and for this evening we made four pizzas. Brendon made the dough using 00 flour that he brought back from Tuscany and fermented it overnight in the fridge. We topped this, my favorite pizza of the evening, with tiny fingernail-sized whole tomatoes, bacon from Smoking Goose in Indianapolis (it's cured with maple syrup and is outrageously good), and fresh cow's milk mozzarella. After spending about seven minutes in a 550 degree oven, the pizza was topped with crème fraîche and pecorino toscano. Divine!" ChristineB

"This is a 9-inch white garlic pie. Antimo Caputo 00 (red bag), 65% hydration. The sauce was a white sauce with a little cayenne and a head of roasted, then chopped, garlic added. The pie was topped with a 4-cheese blend, sun-dried tomatoes, shiitake mushrooms, and pancetta. 

Done on an 800° Big Green Egg. The bottom finished before the top so I slipped a cold 8" pizza stone between the pie and the large stone and let the top finish. :) Awesome!! I may never use a tomato sauce again!" BGEPizza
