"My pal/wife /best friend, knowing my pizza obsession, purchased shredded mozzarella for future projects.  When she gave it to me I said nothing other than thank you. Well, it was Food Basics Shredded Mozzarella. It is Vegan, corn starch based versus soy. I mixed the fake cheese with purple basil pesto/EVOO and per usual used puréed piquillo peppers as a sauce. Plus I topped the pie with sliced Jersey tomatoes. Then baked it and finished it with a chiffonade of fresh green basil.  Sorry I forgot the flowers…..Oh my……More pics here." amusebouche1

"This is my take on Roberta's awesome Speckenwolf: fresh mozzarella, La Quercia speck, mushrooms roasted with olive oil, black pepper, and thyme, and red onions roasted with evoo and smoked kosher salt. Speck is definitely the right meat for this pie. It needs the smoke from the speck. Prosciutto would not be the same. No wolves in Texas, just yotes (coyotes)." TXCraig1
