My take on his masterpiece of simplicity has only mozzarella di bufala along with chives, a drizzle of evoo, and a pinch of sea salt. SD crust, 925F/55 seconds. "Shiitake mushroom and garlic pizza topped with fresh buffalo mozzarella. Gave the dough a 5 day cold rise this time, great texture and flavor. The sauce is made from uncooked home-grown San Marzanos (had a bumper crop this summer and still have a couple of bags in the freezer). Baked as usual at max on an Emile Henry pizza stone. "Caputo 00 flour with about a 60% hydration on Baking Steel heated with convection oven and broiler method.  This was 8.5 oz of dough, so I need to work on stretching the dough out more, as the cornicione just seems to be way too big and uneven here. Basic Margherita, fresh basil, fresh mozz, and sauce." derricktung

Simple stuff here—just my 12-year old's favorite pepperoni and mozzarella in some quick tomato sauce. The crust was the real killer, though. I used a sourdough starter and followed Peter Reinhart's recipe out of Artisan Bread Every Day, but with 00 flour and a half tablespoon per crust of vital wheat gluten. The dough took a lot more hydration, held up much better to shaping, and produced my best cornicione yet. Not that the boy noticed, of course, but I was pretty proud of it! twleslie
