"After this talk thread I took it upon myself to put pizza-flavored chips on pizza. With Pringles. The flavoring  tastes like dried tomato paste with a passing hint of Italian seasoning. So, not like pizza at all. The whole ones pretty much just burned in the oven, the crumbled chips fared better - a nice crisp element, but otherwise not worth the trouble. Eat 'em while you wait for the goods. Maybe sprinkle the crumbled leftover bits on top, post-bake. "This is my first real attempt at an ersatz Detroit-style pizza. I bought a couple 'Detroit-style' pans from a Detroit-style pizza-pan seller and tried one of them out the other weekend. I say 'ersatz' because it's basically just the dough from the Kenji pan pizza post thrown into a Detroit pan. I believe the dough formulation for a 'true' Detroit-style is a little different. Anyway, whatever, blah blah blah. This weekend I'll have to try the method that SonnyC79 shared with us back in October. The sauce is a quick-as-heck formula that dmcavanagh shared with me. Finally back in action and cooking with a brand new HOT oven! Brussels Sprouts, Pancetta, Buffalo Mozzarella, Slivered Garlic and EVOO. Dough was a 3 day cold fermented Pizzeria Mozza inspired dough (added a very small amount of dark rye flour and barley malt) fired on 1/4" steel under an infrared broiler. Bake time was 2:20. "Caramelized onion and broccoli tossed in olive oil, garlic, salt, and lemon zest. Uncooked crushed tomatoes, strained to remove liquid, blended with salt, pepper, fresh oregano, garlic, sugar, and olive oil. Aged mozzarella and a dusting of parmesan after baking. Lahey No-Knead Dough. 9 hour room temp rise, 16 hours cold rise in refrigerator, 1 hour warm-up, 2 hours in balls. Started in 550ºF cast-iron pizza pan on the stove, transfer to electric oven 3 inches under a 550ºF corderite stone, then transfer to the top of the stone 4 inches under a broiler for the last minute. 5 minutes to bake." "Using Kenji's awesome Foolproof Pan Pizza dough and the NY-style pizza sauce, I made 4 pizzas for the Super HarBowl. Not shown are the cheese, supreme, or pepperoni and yellow bell pepper pizzas (red and gold for my Niners!). I doubled the dough and allowed for a 14-hour first rise in my oven. These were baked in cast iron pans in a convection oven at 500˚F (versus my home conventional gas oven at 550˚F+) and the 10-inchers took about 18 mins for a golden bottom.
