The "At Last" at Federal Pizza is a white vegetarian pie that features goat and mozzarella cheeses, broccolini, corn, fresno chiles, basil, and lemon zest.
Shape the Dough
Stretch and shape the dough. Chef Chris Newstrom uses a dough born from a sponge, made with mostly wheat flour, with a touch of rye flour.
Sprinkle the Board
A bit of rice flour is sprinkled on the board to prevent sticking.
Roasted Garlic Olive Oil
The dough is brushed with roasted garlic olive oil, made in-house, with parsley, oregano, basil, and thyme.
Sprinkle shredded mozzarella all over the surface.
Blanched broccolini goes on next.
Corn and Chilies
Add a layer of raw corn kernels and thinly sliced fresno chiles.
Crumble some goat cheese onto the pie, sparingly.
Into the Oven
Bake the pizza. This takes approximately 5 to 6 minutes in Federal Pizza's oven. For home ovens, set it to the highest available temperature and remove when the crust has puffed up and darkened.
Grate lemon zest over the top of the pizza once it's out of the oven. Don't be afraid to be liberal; it's important to get some on every part of the pie.
Throw on some fresh basil, breaking larger leaves in half, and enjoy!
