"After having a spectacular Cherry Jones pizza at Paulie Gee's, I wanted to try to recreate the flavors at home with some minor modifications for what we may be able to bring to market. Here was our test run (and Friday night's dinner): a base of mozz and gorgonzola, tart Montmorency dried cherries, pepperoni, clover honey drizzle, and red pepper flakes for a touch of heat. Not as good as Paulie's, but not too bad! Dough: Mix of AP and 00 flour, 63% hydration, 3% kosher salt, 2.25% ADY, 48 hour cold ferment, 4 hour room ferment. Almost too long of a room ferment... the dough was practically stretching itself out!" —derricktung

Four day cold rise, with a crushed San Manzano tomato sauce, using veal, lemon and thyme salami, roasted shallot, mozzarella, and fresh thyme for the topping.
