Put an egg on it!
The secret to this white pie dwells in the generous drizzle of truffle butter. The creamy egg—also infused with truffle—touches the tip of every slice.
Work that dough
The dough is lightly dusted with fine cornmeal and stretched to approximately 14 inches.
Lay down the base
A layer of shredded mozzarella cheese is laid over the dough, followed by a sprinkling of wild mushrooms—sautéed in olive oil and garlic—and a stripped sprig of fresh thyme.
Slip 'n' slide
The pizza is moved to the peel and slipped into a 550º F oven for 7 minutes.
The secret weapon
Pale salted butter is laced with chopped truffles and brought to just about room temperature during service. A hearty dollop is placed in a small pan—you’ll want to make sure you have enough butter, when melted, to thickly coat the bottom of the pan.
Heat the butter
About 3 minutes into the bake, place the small pan in the oven with the pizza.
After a minute, the truffle butter will gently melt down. Remove the hot pan and crack one egg right into the butter and return it to oven. Allow the egg and pizza to cook for another 2 minutes—7 minutes total for the pizza. Remove the pizza and truffle butter-fried egg from the oven and get ready for the grand finale!
Slice your pizza quickly—that luscious egg is waiting!—and plate it on a serving tray. Floating in so much butter, the egg will slide right out of the pan and into the middle of your pizza. Drizzle your pizza with the remaining truffle butter and it's good to go!
