“I started with half a Trader Joe's dough (I promise people no more TJ dough). To San Marzano tomatoes, I added ground fennel seeds, dried oregano and porcini powder. Low moisture mozzarella with some dollops of Gorgonzola followed next. Then I topped it with hand sliced pepperoni, green bell pepper strips, chopped anchovies, sliced mushrooms, and chopped hot pepper from my balcony garden. I baked it on preheated stone for 8 minutes in a 500-degree oven. It was the combo pie from my New England youth.” —msecondo
