Klausie's Pizza has been serving up Detroit-style pizza in the Triangle since 2010. We caught up with chef and owner, Mike Stenke, to talk about his quest to bring his hometown slice way down south.
'Detroit-style' on Serious Eats
In a world where so many pizza creation stories are debatable (if not outright myths), the history of Detroit-style pizza is surprisingly clear. There is no dispute that Gus Gurra introduced the city to its signature pizza style when he added pizza to the menu of his bar, Buddy's. Guerra sold his business in the early 1950s, but went on to found Cloverleaf.
You've seen the all-edge brownie pan, right? The first time I saw it, one thought popped into my twisted mind: "Forget brownies. Hello, pizza!" After all, on a square pizza, be it Sicilian or grandma or Detroit-style, the corner is king followed closely by the edge. (And the center's just for jokers.)
