Happy My Pie Monday! The hits keep coming this week with some real innovation in the topping department. Take for example dhorst's faux cremini mushroom sausage seasoned with fennel and aleppo! And TXCriag1 took a chance on some cherry tomatoes in the smoker and met with great success. Get those two together and we could have some smoked faux cremini sausage.
Another fine week on the My Pie Monday circuit here at Slice. We've got a self-proclaimed non-gloopy, brighter version of a cheesy artichoke pie from dhorst, further experimentations in dough from Norma427 and jimmyg, a pie that's sure to cure any Brussels sprouts addiction from TXCraig1, and a take on Deep Dish from livefreeorpie.

At last, My Pie Monday! There are some freakin' incredible looking pies this week. There's lots of evidence of Slice'rs helping Slice'rs via past inspiration, advice, and collaboration. Dmcavanagh, Jimmyg, and Norma427 put their heads together on some dough experiments and the results appear here. Adam took some tips from TXCraig1, who also was the source of topping inspiration for Atmast (who, by the way, is soliciting some pizza stone advice.) Imwalkin represents with the Aleppo, which I'm sure fellow addict Dhorst would greet with a big thumbs up. She and newcomer Mitch Birrittella sent in pics of some drool-worthy grilled pies. Scott D's Margherita being pulled from his newly finished wood fired oven is sure to induce some Slice'r envy. And just look at how beautiful JEL's squash blossom pie is. Amusebouche1 makes a eye-catching pie with zucchini and cured meats, and hogletboglet makes a damn good case for how crave-worthy a simple pepperoni pie can be. After all the fried pie talk last week, it's great to see Thezaman's montanara. And last, but not least, livrefreeorpie works a very near and dear regional ingredient onto his pie.
Happy, My Pie Monday! The pie-making Slice'rs are on fire. Thezaman contributes a hyper regional Sicilian from Youngstown, Ohio, Dhorst is back in business with a new double-decker ovens, and Damian produced a "nearly-politan" with some dough formula tips from TXCraig1. Speaking of TXCraig1, he's falling hard for the Calabrian and Cheese combo. Norma427 produced her best Sicilian to date, and Npinto shares the topping collection pie from the end of a pizza-making evening. Another curtain closing pie comes from Livefreeorpie. The spring topping award this week goes to BKMatt with foraged fiddlehead ferns crowning his pie. Speck gets some play on pies from amusebouche1 and atmast. Redwgn67 lays down a fig spread on this week's pizza, jimmyg works Sambuca into his toppings, and KTC brings buffalo chicken and mac n cheese together on one crust. Bbb-ry is back with a Four Cheese and Mushroom pie, Bierebeer focuses on caramelized onions, and Imwalkin pairs Vidalia onions with pepper shooters.
Holy My Pie Monday! There's a whole lot of pizza making been going on. Pizza styles range from Norma's "Greek Goddess" to Thezaman's smoking hot VPN Margherita. Dmcavanagh even made a hybrid style—his Sfincilian. And wait'll you see what all Bierebeer piled on the 'Redneck Pie.' Dhorst worked out a grill hack to combat oven-less pizza making and TotesM'Gotes grilled some pies in order to get around a pizza stone-less vacation kitchen. Imwalkin met topping success with a long hot and capicola combo, and TXCraig1 discovered that putting the sausage on raw produces a superior pie. Bbb-ry made an all-time favorite Calabrian sausage and balsamic onion marmalade pie, and spicedham hit upon a new kind of supreme for his pizza making rotation. While there weren't any Peepzas this My Pie Monday, we did get some Pizza Bunnies, thanks to Norma. Overall, this seemed to be a good week for playing around with new dough formulas. Andrew Janjigian, Imwalkin, ccd2012, and livefreeorpie all worked on variations of the Lahey No Knead method, and Norma and Atmast revisited their new formulas from last week. Dmcavanagh made a change to his dough as well, but in terms of size rather than formula. While there were a lot of Lahey-like pies, other big name doughs got some representation too. Hogletboglet worked with a Reinhart dough, and Burger365 built a pizza on a Nancy Silverton base. A pair of pies from the most recent Tupper Lake Pizza Night were sent in by Tupper Cooks! and Dhorst. (By the way, the aleppo "crack" epidemic spreads beyond the Dhorst territories, into Imwalkin's neck of the woods.) Embracing baseball season, billgraney made a B.A.T pie with bacon, arugula, and Tomato. And amusebouche1 did some spring cleaning and created a cheese drawer salvation pie. In the vein of 'toppings you didn't know you needed to try' we have the ever excellent brussels sprouts and pancetta pie from TXCraig1 and a Tuna and Onion pie (referenced by Bitchin Fixins in the comments of that post) from newcomer onepercent99. Keep up the awesome work everyone!
Merry My Pie Monday! What a bountiful variety of pizzas your fellow Slice'rs have produced for you to feast your eyes upon this week! In terms of crust variety there is a full range from Norma427's focaccia turned pie, to livefreeorpie's deep dish, Effanzo_mane's turbo Margherita, and a dough experiment by jimmyg in which he nails replicating Mulino Marino type 1 Buratto flour. And of course NY is represented in a pepperoni and red pepper topped pie by crystaldragon. Amusebouche1 brings us a white pie with leeks and arugula, and TXCraig1 tops off his pie with sardines and hot Calabrian chilies. As for firing variety, check out the pizza that BiereBeer made in a wood fired stove. I think that makes the first ever My Pie Monday wood stove fired pie.
It's another gorgeous My Pie Monday here at Slice! This week Norma427 revisited the Mellow Mushroom recipe she had previously worked on with some delicious looking results. Billgraney un-mellowed his mushrooms by sauteing them in duck fat (omg) before topping his pie. Livefreeorpie got all pepped up with pepperoni, banana peppers, and roasted reds. But wait, there is another tri-pep variety to be found in Ev's tri-colored bell pepper and onion NY pizza. Olsonmatt made a marinara with garlic, oregano, and fried sage. (You should really already be clicking through the slideshow at this point, but if you need more cause...) TXCraig1 tried his very proficient hand at the Chris Bianco Rosa, Texas-style! (A Texan would never use Arizona nuts.) And in the spirit of Slice'rs collaborating with Slice'rs, Jimmyg tooled around with his dough holding temps this week after some productive MPM discussions on the topic. Happy Labor Day, Slice'rs! What a great My Pie Monday to sit back and enjoy the hard work of your fellow pie enthusiasts. Incorporating the fruits of their gardening labor, jimmyg tops his pie with lots of garden tomatoes and livefreeorpie uses homegrown marinated zucchinis and roasted red peppers. We've got donut peaches and goat cheese on a pie from amusebouche1, a fig and prosciutto pie from TXCraig1, and a mock Jet's pizza from Norma427. Dmacavanagh is also back in the pie-making swing of things with a New York style pizza with extra cheese. Plus, we have a quartet of Margheritas, each unique, from Scott D, olsonmatt, ourpunkkoala, climbhighak.
