Top This: Baby Sinclair (à la Roberta's)

Top This Erin Mosbaugh 6 comments

We caught up with pizza boss Lauren Calhoun at Roberta's in Bushwick to find out how to make the Baby Sinclair, an earthy pie topped with aged cheddar, dinosaur kale, maitake mushrooms, and Calabrian chilis. See the step-by-step instructions in the slideshow. More

Daily Slice: 'Whipper Snapper' at Roberta's

Daily Slice Carey Jones 3 comments

I have a complicated relationship with Roberta's pizza, which when fresh out of the oven is one of my favorites in the city, but falls off that peak within about ten minutes of cooling. But when I make it out to Bushwick, my choice pie at the moment is the 'Whipper Snapper' ($17). The pizza builds a thick, creamy layer of mozzarella and rich, faintly goaty capra sarda atop which it's dotted with snap peas and pancetta, a drizzle of white balsamic over the top. More

Daily Slice: The Def Aleppo at Roberta's Mobile, Frieze Art Fair

Daily Slice Adam Kuban 9 comments

It's a white pie (no tomato sauce) topped with mozzarella, Parmesan, ricotta, Aleppo pepper, and spring garlic. If Aleppo pepper sounds familiar, that's because you've probably seen in on My Pie Monday, where dhorst has been a huge proponent and "Aleppo crack" dealer. In fact, as Falco described the pie, he said, "You know where I got the idea, don't you?" More

Brooklyn: Everything On The Menu at Best Pizza

Slice: New York J. Kenji López-Alt 33 comments

Opened just over a year ago, Best Pizza has fast become one of our favorite pizzerias in New York, and yeah, it's mostly because they serve some of the tastiest by-the-slice stuff around. Since opening the shop, the menu has expanded ever-so-slightly to include sandwiches and a single salad. But man, oh man what good sandwiches those are. Check out everything they've got on the menu. NYC Pizza Cultural Literacy

Here's the tweet that inspired this post:

Yes, @alexandrak, such a post does exist, and if your boyfriend finds what I'm about to write all TL;DR, he can check it out: The 10 Best Pizzas in NYC » That's a solid list, no doubt. And if his NYC pizza research stops there, I'm sure he'd be happy. But I think simply dropping a best-of list on a New York newbie does him a bit of a disservice. After all, he's moving to a pizza mecca. I think a little context is in order.

Daily Slice: The Bee Sting at Roberta's Madison Square Park Pizza Cart

Daily Slice Adam Kuban 18 comments

The sweetness of the honey cuts both the saltiness and spice of the oven-crisped soppressata, all with a fresh-tasting sauce of minimally messed-with crushed tomatoes. The cheese is creamy, and there's just enough of it to satisfy folks who look for a balance of elements on their pies. It's a small, personal-size pizza, more diminutive than even a regular Neapolitan pie, but what more do you want at lunch? Good luck finding a table in the square, but why would you want to?* Find an empty bench in the park across the street; it's much more pleasant and shaded there. More

Let's talk about the weather. Though it's still a bit chilly and rainy here in NYC, the trees at least are blooming, which means truly glorious days are on their way. Roberta's Pizza Cart, Worthwhile Pizza Near Madison Square Park

Adam Kuban 12 comments

View Larger Map Ever heard of Worth Square? Maybe you have if you're a dyed-in-the-wool New Yorker and/or obsessed with the city's streets and its history. Chances are, though, that you may have known it only as a sort of lily pad landing in your Frogger-like attempts to cross the confluence of Broadway and Fifth Avenue between 24th and 25th streets just west of Madison Square Park. Until late last month it was a barren triangle of concrete notable as the home of NYC's second-oldest monument, an equestrian statue of William Jenkins Worth, a general in the Mexican-American War of... Top This: The Cortes from Roberta's in Brooklyn

Top This Adam Kuban 20 comments

The Cortes pizza at Roberta's in Brooklyn is, as its creator Angelo Womack says, an unconventional pizza. Topped as it is — with tomato sauce, crema fresca, Hatch chile–flavored chorizo, shaved fresh radish, pickled onions, jalapeños, and cilantro — it's a natural for this here column. Slice'r TonyCalzone (who you may have met in this Q&A here) used his killer video skills and talked to Mr. Womack about the pizza, capturing it all in a great little movie. More

Utterly Ridiculous, Totally Cheesy Pizza Podcast

Pizzalicious Lauren 4 comments

WFMU's Best Show Gems with Tom Scharpling from 6/14/2010 My friend Dave sent me this ridiculous radio podcast from The Best Show with Tom Scharpling on WFMU, an independent free form station broadcasting at 91.1 FM in New York, at 90.1 FM in the Hudson Valley, and online at wfmu.org A dude calls the show from (the fake) Pizza Aficionado magazine. He dubs all pizza fans 'Zabras and awkwardly engages the host in a conversation about ridiculous pizza shenanigans. Oddly they mention the United States of Pizza series. Then talk about all this other weird stuff like pizza gang... More

NYC Schools Chancellor Joel Klein's Favorite Pizzerias

Adam Kuban 2 comments

Photograph from Rubenstein on Flickr New York City schools chancellor Joel Klein is a pizza freak. Who knew? Yesterday, in the New York Post: "Perfect pizza is as good as it gets. [But] it's got to be perfect," said Klein, who said he first developed his pizza passion while studying at Columbia University, when he drove a city cab all over town on weekends. But this is troubling: "If you have a Neapolitan pizza and you pick it up [by the crust] and the tip flops over, that means it's not done right," he said."You should be able to... More

Frank Bruni on the Great Artisanal Pizza Boom

Adam Kuban 71 comments

New York Times restaurant critic Frank Bruni examines the Great Pizza Boom of 2009 in his story "The Cult of Artisanal Pizza." It's a must-read that packs a lot of info. Let's summarize. The Cliffs Notes Version Bruni makes the claim that the artisanal boom started in 2004 with the opening of Franny's and Una Pizza Napoletana within a few months of each other. "Both brought a new kind of cachet (and vanity) to pizza making and pizza eating in this city. Both changed its demographics" He purposely focuses on newer pizzerias, leaving out old favorites "because they’re products... More
