A Lesson in Pizza Acrobatics

Slice pal Jamesws sent over this video of Tony Gemignani, of Tony's Pizza Napoletana in San Francisco (reviewed here), giving a video demo on how to doss pizza dough. Like the World Pizza Champion that he is, he makes it look pretty easy. He's like a pizza Harlem Globetrotter with that over-the-shoulder move. Pretty smooooth.

Video: New York Times 'Pizza from Scratch'

Melissa Clark of the New York Times Dining Section offers a respectable basics guide to making pizza at home. That's not to say there aren't some debatable points. (At the risk of sounding snobby, I can't advocate pre-shredded mozzarella. And, garlic a must? Debatable. I don't want to talk about the kitchen shears.) But this video is full of practical at-home modifications for the occasional pizza maker, like using the back of a baking sheet as a peel (my go-to method), not using a rolling pin, using moderation with toppings, and getting the oven properly pre-heated. Certainly better tips than these. Ultimately, it's great to see guides that encourage more home cooks to make pizza.

Dalai Lama Pizza Joke: Inquire Within

There was a note in the Slice mailbox this morning from Scott Wiener about this pizza joke bust. I mean, can we fault the guy for trying to work pizza into the conversation when granted audience with his holiness? The intensity and focus in the Dalai Lama's eye when pizza is introduced as the next "topic of discussion" indicates a clear reverence for the crusty, saucy, cheesy stuff. Am I right?
