I found a recipe for pimento cheese pizza online, but my plan is much simpler. I'll cover a par-baked pizza crust with thinly sliced tomatoes then slather it with homemade pimento cheese. I'll bake the pizza at 400 degrees, 10 or 12 minutes, perhaps running it under the broiler for the last minute or so.
Maybe, I'll skip the tomatoes, craft a smoky pimento cheese seasoned with smoked paprika and roasted red peppers, and spread the mix on whole-wheat pizza crusts hot of the grill.
