What You'll Need (for 2 to 4 small pizzas)

For shaved asparagus alone: • A vegetable peeler (a Y-peeler works best) • 1 to 2 bunches medium asparagus (about 1 pound each)
For a Bird's Nest pizza: The above plus • 2 to 4 dough portions (try Lahey's dough from his book My Bread) • Parmesan • Tomme de savoie cheese • Quail eggs (4 per pizza. Chicken eggs work as well; just use 2 per) • Black truffles • Extra-virgin olive oil

Other Uses

Lahey also serves a shaved asparagus salad with avocado, sea salt, a squeeze of lime juice, and mint. It's a great combination. Both asparagus and avocados are totally in season right now. What are you waiting for?
