I got this MPM last Monday but was so swamped with submissions last week that I didn't get it up until this round. Since then, John Wozniak has been popping up regularly in the comments with great advice, etc. Here's what's going on above:
Attached is a pic of a pie I made that turned out pretty well.
It is a white pie that was made with hand-kneaded and -stretched dough (utilizing my own custom recipe) and is topped with Jack, cheddar, and grana padano cheeses; red onion; thin-sliced baby bellas; and (separately cooked medium-rare and added when the pie came out) blade steak.
I baked it at 650°F (in a gas oven preheated on broil for and hour or so) for about 7 minutes on thoroughly seasoned and preheated Lodge pizza pan/griddle.
I have been enjoying Serious Eats (and Slice in particular) for a while now and also studying home- and commercial-pizza-making pretty seriously. I recently decided to register at SE, share some experience/s, and join the conversation a bit. Hope my first submission passes muster :)!
Thanks for de-lurking, John! I'm really glad you've been enjoying Slice and SE and have decided to share your experience/s. The blade steak is pretty serious. How did it work as a topping? Successful?
