I've been enjoying your work for several years now. I just found out about your My Pie Monday photos. Here is my entry. I have been making pies at home for over 17 years. I'm a purist and I almost exclusively go tomato sauce and cheese. I vary the size, dough thickness, shape, and cheese to match my mood. Here is a sample that was baked in a gas oven, 450°F on a pizza stone. Mozzarella di bufala, a bit of oregano, and a sprinkle of grana padano at the end (à la Di Fara).
