My Pie Monday: chc82's Triple P (Parm, Provolone, Pancetta)

Yes! Another one comes out of the woodwork to share with us! chc82 says:
Made some tasty pies last night, I've always enjoyed looking through the Monday pies so though I'd give it a try this week:
- Dough was made using King Arthur "white whole wheat" AP flour (it's all I had in my pantry), rolled very thin. Crust came out thin and crispy, but still had some chew in the middle
- Sauce was San Marzano tomatoes given a quick whirl w/ my immersion blender + a garlic-oregano-chili flake infused olive oil
- Topped w/ a dusting of parm., then provolone cheese, topped w/ pancetta and diced red onions, finished w/ some basil from the garden
Also made a little calzone from the leftover dough.
Don't have a pizza oven or stone; I just crank my oven up to 500°F, let it preheat for a while, and cook the pies in thin metal pizza pans on the bottom rack.
Nice. Hope you don't mind that I have dubbed this the Triple P, chc82!
