Daily Slice gives a quick snapshot each weekday of a different slice or pie that the folks at the Serious Eats empire have enjoyed lately.
Located in the Hollywood Hills, The Oaks Gourmet is a specialty market serving individual brick-oven pizzas that could help Los Angeles pizza achieve a better reputation.
The prosciutto, fig, and gorgonzola pizza ($11.50) was a recent revelation. The light and airy thin crust was tender to the bite, painted with a buttery white garlic sauce. While the sweetness of the sliced figs nicely balanced the salty prosciutto, it was the creamy, savory Gorgonzola cheese that stole the show—in a very good way.
Although I would have preferred less of the baby arugula, the organic greens brought a nice note of pepper and freshness to the pie. The open kitchen is also busy turning out pizzas topped with duck confit and caramelized onions, as well as a clam pizza with bacon and smoked mozzarella.
