For the potato component, Pete Zaaz pizza-makers Pete Entner (No. 7) and Glen Hudson (Pulino's) top the pie with purple potatoes cooked in cream, which get gratinéed under a sheath of cheddar on the pizza itself, making this pie both beautiful and outrageously crave-worthy.
