Top This: Butternut Squash Pizza (à la Grandaisy Bakery)

Grandaisy Bakery debuted its butternut squash pizza (or "Pizza Zucca") three years ago as a seasonal special for fall. Customer were so smitten with the thin, Roman-style square slice covered with sweet roasted butternut squash, fresh sage and nutty gruyère cheese, the bakery now sells it year-round.
We met up with manager Romel Tovar and head baker Julio Guaracha to learn how to make this autumnal beauty. Because it cooks at 480 degrees, it's the perfect pizza for those working with a conventional oven. And, come to think of it, it's pretty much the perfect pizza for Thanksgiving.

What You'll Need (for one pizza)
- 1 dough portion
- 1 butternut squash, peeled, seeded and thinly sliced
- Sage leaves, chopped
- 1 onion, diced
- Gruyere cheese, shredded
- Unseasoned bread crumbs
- Extra virgin olive oil
- Freshly ground black pepper
- Salt
